Spicy Cucumber Salad


I am a great fan of the humble and too often underestimated cucumber. Its colour, cool qualities and crunchiness make it a perfect salad food. This is a simple dish, and simply delightful.


  • 450 g (1 lb) cucumbers
  • 3 tablespoons fish sauce or light soy sauce
  • 3 tablespoons lime juice
  • 3 tablespoons water
  • 2 tablespoons sugar
  • 1 large fresh red Thai chilli, seeded and finely sliced
  • 3 tablespoons finely sliced shallots


Slice the cucumbers – unpeeled – in half lengthways and, using a teaspoon, remove the seeds. Then cut the cucumber halves into thin slices.

In a large bowl, combine the fish sauce, lime juice, water and sugar, and stir until the sugar is dissolved. Now add the cucumber, chilli and shallots and mix well. Allow the mixture to sit for at least 20 minutes before serving.
