This stir-fry noodle dish was brought into Thailand by Chinese immigrants and, after minimal Thai additions, has gained national popularity. A quick and nutritious meal.
Soak the rice noodles in a bowl of warm water for 25 minutes. Then drain them in a colander or sieve.
Heat a wok or large frying pan over high heat until it is hot. Add the groundnut oil, and when it is very hot and slightly smoking, add the garlic and shallots and stir-fry for 30 seconds. Then add the beef and stir-fry for 2 minutes. Then add the soy sauce, salt and pepper, and continu
