This stir-fry noodle dish was brought into Thailand by Chinese immigrants and, after minimal Thai additions, has gained national popularity. A quick and nutritious meal.
Soak the rice noodles in a bowl of warm water for 25 minutes. Then drain them in a colander or sieve.
Heat a wok or large frying pan over high heat until it is hot. Add the groundnut oil, and when it is very hot and slightly smoking, add the garlic and shallots and stir-fry for 30 seconds. Then add the beef and stir-fry for 2 minutes. Then add the soy sauce, salt and pepper, and continue to stir-fry for 2 minutes. Add the rice noodles, mix well and continue to stir-fry the mixture for another 5 minutes. Add the spring onions and stir-fry for another 30 seconds. Finally drizzle in the sesame oil and give the mixture a good stir. Serve at once.
