Asparagus, although a recent arrival in the Thai kitchen, has become very popular. Here is a simple recipe that highlights the great natural flavour of asparagus.
Cut the asparagus on the diagonal into
Heat a wok or large frying pan over high heat until it is hot. Add the oil, and when it is slightly smoking, add the chillies and asparagus and stir-fry for 30 seconds. Then add the water and continue to stir-fry for 3 minutes. Add the sugar, fish sauce and oyster sauce and stir-fry for 2 minutes. Turn onto a warm platter and serve at once.
