Broccoli is not only a delicious vegetable, it is also so easy to prepare. Here it is briefly blanched and then stir-fried with oyster sauce, giving it depth and flavour. It can be easily turned into a vegetarian dish by using vegetarian oyster sauce, which is not made with any animal by-products.
Separate the broccoli heads into small florets; then peel and slice the stems. Blanch the broccoli pieces in boiling salted water for 3 minutes and then immerse in cold water then drain.
Heat a wok or large frying pan over high heat until it is hot. Add the oil, and when it is very hot and slightly smoking, add the garlic, salt and pepper. Stir-fry for 30 seconds and then add the blanch
