Buttery and succulent broad beans are a favourite throughout Asia. In Thailand, I especially like them stir-fried with this red curry paste, which gives them a rich and refreshing dimension without cloaking their distinctive qualities. This is an impressive and delicious vegetarian first course.

Fresh broad beans are, of course, best but frozen beans are an acceptable substitute.
