I first enjoyed this unusual rice dish in Hong Kong and only subsequently learned of its Thai origin. Thai cooks commonly hollow out the pineapple and fill it with fried rice or some other tasty stuffing. It is a very attractive way to serve fried rice, but hollowing out the fruit takes a little effort and is not to be done every day. This is a great dish for a dinner party.
