If this is your first time grilling a whole fish, you may want to leave the scales on to prevent sticking (see “Grilling Fish”).

Ingredients

  • Four 1-pound whole red snapper, Atlantic sea bass, striped bass, pompano, mackerel, or Spanish mackerel, cleaned, scaled or not, and floured if scaled

Method

Prepare a medium-hot fire in the grill. Grill the fish for about 15 minutes per inch of thickness at the thickest part, turning once halfway through the grilling. Serve.
