You can fake a good-tasting jus to augment the juices your roast releases by roasting meat trimmings, or browning them on the stove top, and then treating the drippings to a succession of deglazings and caramelizations. You can do this with trimmings you’ve put in the roasting pan with the roast (see Prime Rib), or you can do it separately and make the jus completely in advance, which is what some restaurants do.
