French toast is a clever way of making use of stale bread. In France, where it is known as pain perdu, it is served with a little sugar and jam, but in America we are lucky to have maple syrup. This recipe calls for stale bread, but fresh bread right out of the package will do well also. Avoid using sourdough bread, which conflicts with the sweet theme of the whole recipe.
