Most bakers make chocolate chip cookies with the chocolate chips sold at the supermarket. To take your cookies up a notch, chop a piece of high-quality bittersweet chocolate for the chips. This recipe contains more butter and walnuts than the classic Toll House recipe.

In a bowl, sift together the flour, baking soda, and salt. In a large bowl, using a wooden spoon or a stand mixer (fitted with paddle blade) on medium speed or handheld mixer on high speed, cream together the butter and both sugars for about 7 minutes by hand or 5 minutes with the mixer, or until smooth and creamy.
