Bittersweet Chocolate Shortbread Squares

I love shortbread and I certainly love chocolate, so I decided to combine the two in this really chocolaty cookie. I had to resist gilding the lily by adding a filling—but I can report that these are particularly good with ice cream. This is another variation of a shortbread baked in one piece, then cut into squares like Orange Shortbread Squares.
