This really easy version of this cookie is also the best one I have ever tasted. I’ve had the recipe for years and it comes from Peggy Pinckley, a native of Scotland, who now lives in Springfield, Missouri. I met Peggy in the late 1980s when she came to an afternoon demonstration class I was teaching at Peter Kump’s. After class she invited me to come to teach at her school, the Parisian Pantry.
