I like the way these ring-shaped cookies look. You may use a doughnut cutter or simply cut round cookies, then cut out the centers. These are especially beautiful when streaked with Sugar-Based Chocolate Glaze for Cookies and a few pinches of finely chopped pistachios.

- In a bowl, combine the flour and cocoa; stir well to mix.
- In the bowl of a standing electric mixer fitted with the paddle attachment, beat together on medium speed the butter and sugar until soft, fluffy, and whitened, between 5 and 10 minutes. Beat in the vanilla and egg yolks, one at a time, beating smooth after each addition.
