These were created in Dallas by Kyra Effren for the bar mitzvah of the son of our mutual friend, Sheri Portwood. Better than a standard spritz-type cookie, these are enriched with cream cheese and are especially fragile because of the combination of flour and cornstarch. To dot the center of the cookies with chocolate, I like to invert a chocolate chip—it fits just perfectly and leaves the center of the cookie with a perfect circle of chocolate.
