When I was a child, my paternal grandmother, Angelina Maggio Malgieri, would occasionally take me to a Chinese restaurant in downtown Newark. There was egg drop soup, egg rolls, fried rice, and chow mein, and always almond cookies for dessert. These are based on a recipe shared by Jayne Sutton.

By the way, lard is the right fat to use for these, though lard and butter together give a better flavor. Don’t substitute vegetable shortening for the lard,
