I don’t know if these cookies—composed of a roll of dough flattened and filled with jam—are called this in the United States, but it is the standard European name for them. This is the special occasion for which you’ve been saving that jar of homemade or fine-quality jam or jelly. This delicate dough is a perfect foil for a subtly flavored filling.
