“Tepache is a refreshing and delicious, lightly-fermented beverage made from the skins and cores of pineapples. It is effervescent and tangy, with almost no alcohol, enjoyed by children and adults alike. Tepache is from Mexico, where it is frequently made at home using the byproducts of eating fresh pineapples. I love to make it whenever I eat a pineapple, and I love it as is, or as a cocktail base. I recommend sourcing organic pineapple if you can, as you’re fermenting the skin.”
