A touch of ketchup and biscuit mix coating make this fish special


  • 2 lbs. dressed fish (whole small filets or steaks from larger fish)
  • 1 egg
  • 2 tblsp. water
  • 1 c. all-purpose buttermilk biscuit mix
  • 3 tblsp. ketchup
  • ½ c. shortening or salad oil


  • Dip fish first in egg beaten with water, then in biscuit mix blended with ketchup.
  • Fry slowly in heated shortening (use ½″ in bottom of skillet) until golden brown on both sides. Serve with lemon and parsley.
