Baked Northern Pike

You may prefer to precook onion slices: Sauté them in butter


  • 2 northern pike, cut in crosswise slices about 2″ thick
  • Salt
  • Pepper
  • 1 large sweet onion, cut in thick slice


  • Place slices of pike in a greased baking pan. Season with salt and pepper. Place slices of onion on fish. Spoon tomatoes over onions. Crumble basil over tomatoes.
  • Bake in moderate oven (350°) about 1 hour or until fish flakes easily with fork. Number of servings depends on size of fish.
