Lime juice enhances fish flavor-mayonnaise top browns temptingly
2 large fish filets
Juice of 2limes
Mayonnaise or salad dressing
Grease a piece of heavy-duty aluminum foil well. Place on baking sheet. Turn up edges of foil so juices will not run off. Place filets on foil, skin side down. With a sharp knife, score fish in crisscross fashion. Squeeze lime juice over surface. Let stand 30 minutes before broiling.
Preheat broiler. Spread surface of fish with mayonnaise. Place baking sheet 5″ from broiler unit. Broil 10 minutes, until fish flakes easily with a fork and mayonnaise bubbles and is brown. Sprinkle with paprika and seasonings; garnish with parsley.
