Ingredients

  • 1 tblsp. shortening or salad oil
  • ¼ c. chopped onion
  • 2 (

Method

  • Heat shortening in 9 or 10″ heavy skillet Add onion; cook 2 minutes. Add hash, breaking it up with spoon. Cook over medium heat, 6 minutes, stirring occasionally.
  • Reduce heat to low; pat hash level in pan and make 6 deep hollows with back of spoon. Drop an egg into each hollow; season with salt and pepper.
  • Cover skillet tightly. Cook 5 minutes or until
