Two layers of this savory filling in every sandwich make it doubly good


  • ½ lb. bologna
  • ½ lb. process pimiento cheese
  • 1 small onion
  • green pepper (optional)
  • 6 small sweet pickles
  • ½ tsp. salt
  • 6 tblsp. salad dressing or mayonnaise
  • 1 tsp. prepared mustard
  • Dark or light bread
  • Fresh garden lettuce


  • Grind bologna, cheese, onion, green pepper and pickles into a bowl. Add salt, salad dressing and mustard.
  • For each sandwich, butter lightly 3 slices bread. Spread two with about ¼ c. filling. Stack together with buttered slice in middle. Insert lettuce.
