Refreshing American version of the English classic teatime special
With a very sharp knife, cut off both ends of long unsliced buns (Coney buns). Then carefully slice the buns thin. Spread one side of each slice with butter and then with mayonnaise. Cut a cucumber, peeled or unpeeled, as you like, in thin slices. Let stand in ice water until crisp. Drain and dry on towels. Place a cucumber slice between two slices of bread. If you have cucumbers in your garden, try to select them with the same diameter as that of the sliced rolls. If cucumber slices are too large, trim them to fit.
