Perfect companion for roast beef

Ingredients

  • 12 medium potatoes
  • 2 c. chopped beef suet
  • Salt
  • Pepper

Method

  • Peel potatoes and cut in lengthwise halves. Boil 8 minutes in salted water; drain.
  • Place beef suet in shallow pan; melt in oven.
  • One hour before dinner, add potatoes and bake in slow oven (325°) about 1 hour, or until tender. Turn occasionally to brown potatoes evenly. Season with salt and pepper.
