Scrub potatoes well. Cut diagonally, with skins on, in 1½″ slices. Spread in greased 13 X 9 X 2″ baking pan. Sprinkle with salt; brush with butter.
Bake uncovered in hot oven (400°) 30 minutes, or until tender. Remove from oven and top with cheese slices (about 6). Return to oven about 5 minutes, or until cheese is melted. Garnish with sprigs of parsley.
