If you’re fond of parsnips, you’ll like these golden brown patties

Ingredients

  • 8 to 10 medium parsnips (2 lbs.)
  • ½ tsp. onion salt

Method

  • Peel parsnips. Cut in halves crosswise. Then halve or quarter lengthwise to make strips about the same size. Cook in boiling salted water until tender. Remove cores if woody.
  • Mash parsnips. Beat in seasonings and egg. Chill well.
  • Make 6 patties. Coat with bread crumbs. Cook patties on both sides in melted butter until golden brown.
