Double recipe—use one batch and freeze the other for quick browning


  • 6 medium potatoes, peeled
  • Cold water
  • Fat for frying
  • Salt
  • Pepper


  • Cut potatoes lengthwise, then crosswise into ⅜″ strips. Rinse in cold water; dry thoroughly between towels.
  • Fry small amounts in deep, hot fat (360°) about 5 minutes, until tender but not brown. Drain on paper toweling; repeat with remaining batches.
  • To prepare for freezing, cool to room temperature. Package, seal, label, date and freeze. Recommended st
