Don’t bother to peel the zucchini

Ingredients

  • 1 lb. small zucchini
  • ¼ c. butter or regular margarine
  • ¼ tsp. garlic salt
  • tsp. pepper
  • 2 tblsp. water
  • 2 tblsp. grated Parmesan cheese

Method

  • Slice zucchini (do not peel). Melt butter in skillet; add zucchini, seasonings and water.
  • Cover tightly and simmer over low heat about 10 minutes. Sprinkle with cheese. Simmer an additional 5 minutes.
