Ginger and mint enhance peach-melon flavors in this refreshing salad


  • 2 (3 oz.) pkgs. lemon flavor gelatin
  • c. hot water
  • ½ c. frozen lemonade concentrate, undiluted
  • 1 (7 oz.) bottle ginger ale, chilled
  • tsp. peppermint extract
  • 2 c. fresh peach balls
  • 1 c. honey dew melon balls
  • 1 c. seedless green grapes, cut in halves


  • Dissolve gelatin in hot water. Add lemonade concentrate, ginger ale and peppermint extract. Stir to dissolve. Chill until partially set.
  • Fold in remaining ingredients. Turn into a 1½-qt. mold or 8 individual molds. Chill.
