The 3-leaf-clover loaf is an Easter and Christmas tradition in Greece

Ingredients

  • of Classic Sweet Dough (before kneading)
  • ½ c. currants
  • 1 tsp. grated lemon peel
  • ¼ tsp. ground mace
  • 1 egg, beaten (for glaze)

Method

  • Remove one third of Classic Sweet Dough when mixed, before kneading. Work in the currants, lemon peel and mace; knead until dough is smooth and elastic, 3 to 5 minutes. Place in lightly greased bowl; turn dough over to grease top. Cover, let rise in warm place until doubled, about 1 hour.
  • Punch down, turn onto floured board and divide into 3 equal parts. Shape each part into a smooth ball and arrange on greased baking sheet to form a 3-leaf clover. Leave ½″ between the 3 balls.
  • Cover and let rise in warm place until doubled, about 1 hour. Brush each ball of dough with beaten egg.
  • Bake in moderate oven (350°) about 25 minutes. Cool on wire rack.
