Spoon fluffy hot bread onto plate, serve with butter and eat with fork

Ingredients

  • 1 c. white or yellow cornmeal
  • c. boiling water
  • 1

Method

  • Put cornmeal in large bowl; stir in boiling water. Continue to stir until cool to prevent lumping.
  • Blend in butter and egg yolks. Stir in buttermilk, salt, sugar, baking powder and soda.
  • Beat egg whites until soft peaks form; fold into cornmeal mixture. Pour into greased 2-qt. casserole.
  • Bake in moderate oven (375°) 45 to 50 minutes. Serve at
