Add 1 tblsp. lemon juice to 1 c. berries if they’re very ripe and sweet


  • 8 c. strawberries
  • 6 c. sugar
  • Lemon juice (optional)


  • Wash, drain, hull and crush berries. Add sugar and cook slowly, stirring constantly until sugar dissolves. Bring quickly to a boil and boil rapidly until the jellying point is reached.
  • Pour or ladle hot jam into hot sterilized jars; seal.
