Use either wild or “tame?’ berries—perfect on pancakes or waffles

Ingredients

  • ¼ c. powdered fruit pectin
  • 2 tblsp. sugar
  • 1 c.

Method

  • Combine pectin and the 2 tblsp. sugar; mix thoroughly. Add the finely sieved berries and mix at low speed for 7 minutes.
  • Add remaining sugar, corn syrup and lemon juice. Mix 3 minutes longer.
  • Pour into freezer containers and secure lids. Let stand at room temperature overnight or until jellied. Freeze.
