These old-fashioned preserves in a glass dish enhance country meals

Ingredients

  • 5 lbs. firm, red or yellow tomatoes
  • 5 lbs. sugar

Method

  • Skin and cut up tomatoes. Add remaining ingredients.
  • Simmer slowly until thick, stirring frequently, about 45 minutes. Remove ginger root, if used.
  • Pour into hot sterilized glasses. Seal at once.
