Ingredients

  • 7 lbs. ripe, yellow quince
  • 8 c. sugar
  • 2

Method

  • Cut fruit, cored, but not peeled, in ⅓" slices. Weigh. Simmer in a little water until tender. Drain and place in a crock, glass jars, pottery or enamel-lined pan with tight lid.
  • Combine sugar, vinegar, spices and boiling water. Bring to a boil and boil 2 minutes. Immediately pour over the fruit. Make certain syrup covers fruit. Cover tightly and store in cool, da
