Soften orange ice or sherbet; stir until smooth. Spoon into 8 individual molds that have been rinsed with ice water. Freeze. (Or freeze scoops of sherbet on metal tray until very firm.)
Wash and hull strawberries. Refrigerate until serving time.
To serve, place individual serving dishes in freezer until very cold. Unmold orange ice into cold serving dishes by wrapping a cloth dipped in warm water around each mold. Spoon ½ c. whole strawberries and 1 tblsp. Maraschino Cherry Sauce over each serving. (If you are a wine cook, try 2 tblsp. port wine instead of the cherry sauce.) Serve quickly.
