Beat egg whites until foamy. Gradually add 3 tblsp. sugar. Beat until soft peaks form.
Beat yolks slightly. Add milk, 3 tblsp. sugar, tapioca, salt and orange peel. Bring to boil over low heat, stirring.
Remove from heat. Add lemon juice. Slowly add a little hot mixture to egg whites; mix well. Quickly stir in remaining mixture. Pour into dessert dishes
