Use your electric blender to speed making this colorful dessert
½c. boiling water
1 (3oz.) pkg. strawberry flavor gelatin
15marshmallows, cut in halves
½c. cold water
1 (10oz.) pkg. frozen strawberries in syrup, partially defrosted
1tsp. lemon juice
1c. heavy cream
Place boiling water and gelatin in blender. Cover; blend on “low” until gelatin is dissolved. Add marshmallows, cold water, strawberries and lemon juice. Cover and blend on “low” until smooth (rest hand on container lid). Remove contents from the container; chill until partially set.
Fold in blender-whipped heavy cream and refrigerate in 6 to 8 individual serving dishes or an 8" square pan. Chill until firm. Serve with crisp cookies.
