Nutritious cottage cheese provides delicate flavor and smooth texture


  • 3 c. cottage cheese, drained
  • 5 eggs, slightly beaten
  • ¼ tsp.


  • Press cottage cheese through sieve (or blend with 1 c. of the milk in blender until smooth). Add eggs, salt, vanilla and almond extract to cheese; blend thoroughly.
  • Combine sugar and flour; slowly blend into cheese mixture. Add milk. Pour into buttered 9" square pan. Set dish in pan of water. Bake in moderate oven (350°) 1 hour or until knife inserted halfway bet
