Nuts and dates are not chopped—you cut them when you slice cake

Ingredients

  • c. sifted flour
  • c. sugar
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 lbs. pitted dates (do not chop)
  • 2 lbs. shelled walnuts
  • 1 lb. shelled Brazil nuts
  • 1 (8 oz.) jar maraschino cherries, drained
  • 5 large eggs, beaten
  • 1 tsp. vanilla

Method

  • In large bowl, sift together flour, sugar, baking powder and salt.
  • Add dates, nuts and cherries; stir to coat well.
  • Combine eggs and vanilla. Mix into flour-nut mixture. (Easy way is to use your hands.)
  • Spoon into 3 greased 8½ X 4½ X 2½" loaf pans.
  • Bake in slow oven (325°) 1 hour. Cool before slicing or freezing.
