New, unusually delicious apple pie

Ingredients

  • Unbaked 9" pie shell
  • 3 egg yolks
  • c. sugar
  • 1 tblsp. flour
  • 1 tsp. ground cinnamon
  • tsp. ground cloves
  • 1 tblsp. melted butter
  • 1 tblsp. vinegar
  • 1 c. grated peeled apples (2 to 3 medium)
  • ½ c. chopped pecans
  • 3 egg whites

Method

  • Beat egg yolks until thick and lemon-colored.
  • Combine sugar, flour and spices. Add to egg yolks alternately with butter and vinegar; mix well.
  • Stir in apples and pecans.
  • Beat egg whites until stiff peaks form. Fold into apple mixture, blending well.
  • Pour into unbaked pie shell.
  • Bake in moderate oven (350°) about 50 minutes, or until knife inserted 1" from edge of pie comes out clean.
