Ingredients

Pastry for 2-crust pie

  • 2 c. elderberries
  • c. chopped peeled tart apples
  • 1 c. sugar
  • tsp. salt
  • 3 tblsp. quick-cooking tapioca
  • 2 tblsp. butter

Method

  • Wash and stem elderberries. (Hold berries in palm of hand and pull stems off with wire egg beater, the kind shaped like tennis racquet.)
  • Combine elderberries, apples, sugar, salt and tapioca, crushing berries with spoon.
  • Spoon mixture into pastry-lined 9" pie pan; dot with butter; top with pastry lattice.
  • Bake in hot oven (400°) 35 to 40 minutes, or until apples are tender and crust is golden.
