Elderberry/Apple Pie

Pastry for 2-crust pie

• 2 c. elderberries
• 1½ c. chopped peeled tart apples
• 1

• Wash and stem elderberries. (Hold berries in palm of hand and pull stems off with wire egg beater, the kind shaped like tennis racquet.)
• Combine elderberries, apples, sugar, salt and tapioca, crushing berries with spoon.
• Spoon mixture into pastry-lined 9" pie pan; dot with butter; top with pastry lattice.
• Bake in hot oven (400°) 35 to 40 minut
