Ingredients: 1 envelope unflavored gelatin; 1 (6 oz.) can frozen pineapple juice concentrate; 4 egg whites; 2 tblsp. finely grated orange peel; ⅔ c. heavy cream, whipped; ¼ c. sugar; 4 egg yolks, beaten until thick and creamy; ¼ c. cold water; ¼ tsp. salt; ½ c. sugar

9" Graham Cracker Crumb Crust
1 (6 oz.) can frozen pineapple juice concentrate
1 envelope

Pie
Vegetarian

Method

Thaw pineapple juice concentrate and simmer until it is reduced to ½ c. (or until the total is ⅓ less). Cool.
Soften gelatin in water at least 5 minutes.
Add egg yolks to pineapple juice; add gelatin and ½ c. sugar. Place in double boiler. Cook 10 minutes, stirring often. Remove from heat. Add salt and orange peel. Mix well and chill until mixture thick
