Ingredients

  • c. sifted flour
  • 1 tblsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. salt
  • ¾ tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 1 c. shortening
  • 1 c. sugar
  • 1 egg, beaten
  • ½ tsp. vanilla
  • 1 c. dark molasses
  • ½ c. strong coffee

Method

  • Sift together flour, soda, baking powder, salt, ginger and cinnamon.
  • Cream shortening; add sugar gradually; beat until light; add egg and vanilla.
  • Add molasses and coffee, then sifted dry ingredients; mix well; chill.
  • Roll out on lightly floured board ¼" thick; cut with round 2" cutter.
  • Place about 2" apart on greased baking sheet. Bake in hot oven (400°) 8 to 10 minutes. Spread on racks to cool.
