Ingredients: 1 c. sugar; 1 c. shortening; 1 tsp. ground cinnamon; ¾ tsp. ground ginger; ½ c. strong coffee; 1 c. dark molasses; ½ tsp. vanilla; 1 egg, beaten; 2 tsp. baking powder; 1 tsp. salt; 5½ c. sifted flour; 1 tblsp. baking soda

Ingredients

5½ c. sifted flour
1 tblsp. baking soda
2 tsp

Vegetarian
Cookies

Method

Sift together flour, soda, baking powder, salt, ginger and cinnamon.
Cream shortening; add sugar gradually; beat until light; add egg and vanilla.
Add molasses and coffee, then sifted dry ingredients; mix well; chill.
Roll out on lightly floured board ¼" thick; cut with round 2" cutter.
Place about 2" apart on greased baking sheet. B
