Ingredients

  • 1 c. sugar
  • 1 c. shortening
  • 1 c. light molasses
  • 1 tblsp. vinegar
  • 6 c. sifted flour
  • ½ tsp. salt
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • 1 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 2 eggs, beaten

Method

  • Combine sugar, shortening, molasses and vinegar in saucepan; bring to boil and cook 2 minutes. Cool.
  • Sift together flour, salt, soda, baking powder and spices.
  • Add eggs to cooled molasses mixture. Add dry ingredients and mix well. Chill.
  • Roll out dough on lightly floured board, about ⅛ to ¼" thick. Cut with cookie cutters of desired shapes; place 1" apart on greased baking sheet.
  • Bake in moderate oven (375°) 8 to 10 minutes, or until done. Transfer cookies to racks to cool.
