Ingredients

  • 1 c. shortening
  • ¾ c. sugar
  • 1 c.

Method

  • Cream shortening and sugar until fluffy. Add carrots, egg and vanilla; mix well.
  • Sift together flour, baking powder and salt; add to carrot mixture; mix well. Drop batter by teaspoonfuls about 2" apart onto greased baking sheet.
  • Bake in moderate oven (350°) about 20 minutes. Place cookies on racks to cool. While warm, spread with
