Ingredients

  • 20 large dried apricot halves
  • ½ c. flaked or shredded coconut
  • ¼

Method

  • Wash apricots. Cover with boiling water; let stand 5 minutes, or until softened. Drain; dry on paper toweling.
  • Combine coconut and pineapple; mix thoroughly.
  • Flatten each apricot half, skin side down. Spread portion of coconut-pineapple mixture over surface. Roll, jelly roll fashion. Place on tray to dry at room temperature.
