  • Combine sugar, water and syrup in a 2-qt. heavy saucepan. Cook, stirring constantly, until sugar dissolves and mixture reaches a boil. If sugar crystals form on sides of pan, wipe them off. Boil to the hard ball stage (252°).
  • Combine egg whites and salt, beat until stiff. Pour hot syrup over egg whites, beating constantly until mixture loses gloss.
