Although headcheese is prepared in many parts of America, it is reminiscent of my Mississippi childhood. My father raised numerous animals, including chickens, cows, and hogs, and the heads of the latter were turned into hog’s-head cheese. The preparation of the dish with actual hog’s heads is a trifle difficult in this day and age. You can prepare a highly acceptable mock version of the dish using pigs’ knuckles and pigs’ feet.
