  • 1 cup quick-cooking grits
  • 1 roll (6 ounces) garlic cheese
  • 8 tablespoons butter
  • ½ cup chopped scallion, including green part, optional
  • 2 eggs, lightly beaten
  • ¾ cup milk

Method

  • Cook the grits according to package directions. Stir in the cheese, butter, and scallions. Pour the mixture into a buttered 2-quart casserole. Let cool.
  • Preheat the oven to 375 degrees.
  • Blend the eggs and milk and pour over the grits. Bake about 1 hour.
